I brined that pork chop for 24 hours and smoked it for 2.5 hours before i cooked it. If you want the recipe, let me know. The vanilla beans in the brine, among other things, tied in perfectly with the mocha coffee beans in the smoker. And those pan-seared plum slices could have been a dish all on their own.
