lox scrambled eggs

It might not look delicious but it tasted incredible. Grape tomatoes and sweet bell peppers fresh from the garden in a sharp cheddar omelete topped with nova scotia lox and basil. Cant forget about the pepper!

when I make scrambled eggs I like to crack the eggs into the pan as if im making sunny side up eggs. i let it cook for about 30 seconds, and then i add the diced cheddar cheese and break the yolk. I mix everything in the pan up and then add the diced bell pepper and grape tomato, one turn of black pepper, a dash of salt, and then finish the scramble eggs. put a dollop of scrambled egg on a cracker, put a tiny piece of lox on top, and enjoy!
